Vegetable Garden Paradise

The Bull Egg Tomato variety is one of the highest quality products to come out of Málaga. It is especially abundant in the Guadalhorce Valley and more specifically in Coín, known for it´s fertile land.

This variety, which holds a quality seal which differentiates it from other varieties, has some very peculiar characteristics. As is inferred by it´s name, it is of large proportions.In fact, it normally weighs between 300 and 600 grams, although it may weigh over 1kg. In terms of it´s taste, it is a variety with few seeds and a fleshy texture. It is much valued for it´s creamy and soft texture. In mouth it is distinguished by it´s well-balanced acidity and sweetness.

Our setting is Farajan, a true white village situated in the Genal Valley. A region covered in chestnut trees, which mix with pine trees, oak trees, cork oak trees, and in the fall months offer a breathtaking scenery, tinted with reds, ochres, greens and browns. A place of astonishing beauty where the Torres Chacón brothers have over 200 hectares where they raise their pure Iberian pigs, whose final production goes soley to the Pimpi.

In the pre-mountain season they feed on the chestnuts that fall from the trees. Later from the acorn off the cork oak trees and holm oak trees. In the summer months they receive a complimentary diet of wheat.

After the curing process, the hams rest for two to three years. The result is a slender calf and a marbled slender leg which results in a unique flavor that can only be found at the Pimpi.

The Málaga goat is a native species which can be found within the most milk-producing species in the world. Apart from it´s large milk production it is known for it´s meat production; for which it´s three main products are: milk, cheese and Málaga Baby Goat.

The most important characteristics of this species are it´s good adaptation to the different systems of exploitation and it´s elevated milk production.

The Gazelle Horn egplant variety is cultivated in Málaga in serveral regions, but especially present in the Axarquía and the Guadalhorce Valley.

It has a very mild taste and has hardly any bitter points which the other eggplant varieties are known to have. They are considered the oysters of the eggplant family.

Olive oil is fundamental in the Mediterranean diet. It is an ancestral product which has accompanied us all though history since ancient Egypt until present day.

With the arrival of the Fall our land in Coín prepares to start olive harvesting.

The harvest process is done in a traditional fashion using the “vareo” technique, which is hitting the branches of the olive tree with long sticks which make the olives fall off, and this way allowing for a top quality product, supporting the local producer, helping with the local economy and reducing environmental impact.
